Pickles!
We had a bumper share of cucumbers from the CSA this week so when I got home from work yesterday I decided to try making refrigerator pickles.

I took my inspiration from a recipe at Coconut & Lime but then I sort of made it my own. I used the jar that I usually make pickled eggs in and quartered up all the cucumbers and threw them into it.

Then I added 8 cloves of sliced garlic, a few handfuls of pickling spice, some salt and lots of fresh dill. I filled the jar halfway with water and then filled it the rest of the way with white vinegar.


Don't they look pretty in the sunlight?
Now they are tucked away in the fridge. These were super easy to make. The hard part is going to be waiting a week until they are ready to eat!

Refrigerator pickles are the best without the hassles of canning. They look scrumptious and yes waiting the full week is the hardest part! Now I know what I'm going to do with my pickles from farmer's market this week. Enjoy.

My mother made THE best dill pickles. I haven't eaten one since she died. Yours do look good!

I often regret not getting Grandma's refrigerator pickle recipe from her before she died. I did get hold of her recipe box long enough to copy things but alas that was not in it. Hers were just overnight and they were sort of sweet, a bit like a bread and butter pickle. Yours look delicious!

Is it really THAT easy? You are a goddess, thank you for that recipe. I never knew it was so simple. And anything that uses 8 (EIGHT!) cloves of garlic is just right for me.

Oh... now I want a pickle. You stink.
I thought my food cravings for the week were over. thank god pickles are "no points" on weight watchers!
I might have to try these "at home" pickles...I usually grab mine from the kosher deli.... mmmm sour pickles.

Oooo...My grandma made pickles. My cousin and I would sneak into her pantry and open up jars of pickles and eat them. She hasn't made pickles in a long time. So..all we have now is lefse.

Only a week! My kids are so mad at me that we have to wait 4 weeks before we can eat the pickles we made. I wasn't sure about doing refrigerator pickles, which would be shorter. I didn't know if they would still be more "cucumber-tasting". DH doesn't like cucumbers, but does like pickles. This is my first year making pickles. We were getting too many for us to just eat in salads or for snacks. We got 4 pints of dill spears last week and made 6 jars of sweet pickle chips this week.

Wow - your pickles look/sound amazing! I was pleasantly surprised to taste our CSA cukes and find them sweeter and more flavorful than any I'd ever had before. Of course we only got 2, not several million...
